We’re loving this healthy twist on macaroni and cheese, courtesy of the incredible Erica von Trapp (otherwise known as Bubble Child!). We can’t think of a better way to describe it than in Erica’s own words: “Macaroni and cheese meets sweet potato casserole and it’s vegan? Beam me up.” This dish is also tasty, packed full of great-for-you nutrients and looks beautiful, to boot. Beam us all up!

– 200g skinnypasta SUPERFOOD TEFF macaroni
– 2 large sweet potatoes, cut into thin disks
– 1/4 cup olive oil
-1/4 tsp sea salt
For the bechamel:
– 2 cups dairy-free milk of choice
– 4 tbs. brown rice flour
– 2 tbs. coconut oil
– 1/2 tsp. sea salt
– 1/2 tsp. onion powder
– 1/4 tsp. ground nutmeg
First, prepare the bechamel: Heat coconut oil over medium heat in a medium-sized pot. Once melted, add flour and whisk immediately to avoid clumping. Simmer for 30 seconds to cook the flour thoroughly, then add milk. Whisk until it reaches a thick texture, and bring the heat up to high to achieve a boil. Keep whisking to avoid burning the milk. Add salt, onion powder, and ground nutmeg. Whisk to disperse flavor, then remove from heat.
Bring water to a boil and add 200g skinnypasta SUPERFOOD TEFF macaroni. Cook for 1 minute and check for doneness, strain and mix into bechamel.
Pre-heat oven to 375 degrees F and get out a pie pan or casserole dish. Should be over 2″ deep.
Cut your sweet potatoes into thin disks (about 1/2 cm in thickness), toss with olive oil and sea salt in a large bowl.
Layer sweet potatoes on the bottom of the casserole dish, then top with a layer of the cooked macaroni. Top with another layer of sweet potatoes and macaroni.
Bake in the oven for about 35-40 minutes, or until the top is crispy and the potatoes are cooked through. Top with salad or parsley for some color and flavor!
– If you want a thicker sauce, replace 1 tbs. rice flour with 1 tbs. arrowroot starch.
