Italian meets Mediterranean in this amped up version of our skinnypasta GLUTEN FREE 3-Cheese & Spinach Ravioli! We’ve taken one of our most popular prepared entrées and added a few steps, a handful of ingredients and a whole lot of love to create this flavorful dish. We promise it’s well worth the (minimal) effort!
In a pan or skillet, place the olive oil and garlic. Sautee on medium heat until garlic goldens. Turn heat to low and add the sundried tomatoes (thinly sliced if they are too wide), Kalamata olives and capers (optional). Heat mixture, stirring occasionally for 5 minutes.
Meanwhile, take the skinnypastaTM GLUTEN FREE 3-Cheese & Spinach Ravioli out of the carton packaging. Lift film corners and place in microwave. Heat on HIGH for up to 5 minutes (note that microwave times may vary). Carefully remove from the microwave (entree will be hot) and stir contents. Microwave for an additional few minutes if necessary. Once tray has cooled slightly, remove film entirely and transfer the contents to the mixture in the pan. Turn heat to very low – you don’t want the pomodoro sauce to evaporate – and simmer for an additional 5 minutes.
Transfer to a plate and add a sprinkling of chili flakes and Parmesan cheese for an added burst of flavor.

-With olives, caper and sundried tomatoes, this dish can get quite salty. That’s why we suggest dry-packed sundried tomatoes if possible, and capers are an optional addition.
