Like many people, we love soup for the obvious reasons: it’s warm, cozy, delicious, and comforting – it’s soul food! We also love soup because one pot goes a long way. The addition of Gabriella’s Kitchen™ SUPERFOOD TEFF Macaroni adds flavour and protein to this classic dish. In a large pot, melt butter and olive oil over medium-high heat. Add the onions, carrots, celery, zucchini, and ½ teaspoon of salt. Allow to cook for 8-10 minutes, stirring occasionally, until vegetables are tender.
Add the diced tomatoes, beans, tomato sauce, vegetable broth, basil, parsley, oregano, salt and pepper. Stir together and let the mixture come to a slow boil. Once boiling, turn the heat to medium and let simmer for up to 15 minutes.
Meanwhile, bring a large pot of water to boil and add the 200g of Gabriella’s Kitchen™ SUPERFOOD TEFF Macaroni – which should have been thawed briefly at room temperature. Cook for only one minute and test pasta for doneness. Do not overcook – the pasta will cook further once added to the soup. Strain the pasta and return to the pot. Measure out 1 ½ cups of cooked macaroni and transfer to the pot of soup (feel free to add more macaroni if you want!). Add handfuls of spinach leaves and stir contents until all are mixed and cooked through. Add more salt and spices if needed. Serve hot and enjoy!
