Get to know the members of the Gabriella’s Kitchen team a little better in our “Five Questions With” series! First up, our President, Vince Micallef.
In 10 words or less, what do you do for Gabriella’s Kitchen?
As President, I look after all operations and finance stuff.
When it comes to exercise, what’s your favorite activity?
A 10-mile run, preferably on a hot and sunny summer’s day.
What does your ideal Saturday entail?
Sleeping in to 8:00 a.m. – I know, most people don’t consider that as sleeping in! – and sitting in my reading room overlooking the city of Portland while I read my morning paper with a cup of strong coffee, then heading out for an easy pace 10-miler, followed by brunch with friends and family.
What was the last book you read that you really enjoyed?
Basilica: The Splendor and the Scandal: Building St. Peter’s – it’s the history of the building of St. Peter’s. It was fascinating, educational and entertaining!
Last but not least, let’s talk GK pasta. Which product is your go-to?
This is a tough choice, but my go-to is High Protein Spaghetti. I love the flavor and the texture. My go-to recipe always starts the same: plenty of olive oil and garlic and a diced tomato or two. I start by simmering that on the stove and then just start adding whatever is in my fridge – spinach, peppers, broccoli, squash, whatever veggies I have and then I’ll usually throw in some extra protein, usually chicken or sausage. I’ll add some nice spice, something to give it a kick, lately it’s been this Moroccan spice I’ve found. Once my fixings are all ready, I’ll bring my water to a boil, drop in my High Protein Spaghetti for just 90 seconds, and then mix it all in a big serving bowl and then liberally top it off with plenty of Parmesan.
